It was a great holiday season and I’m back enjoying the deliciousness of food. Today I’m featuring these scallops wrapped in lardo, asparagus, pearl onion, tomato confit and brown butter sherry. The colors and freshness of the topping was outstanding. The scallops themselves where amazing. I had a great evening at Barceloneta in Miami Beach….
So buttery, so creamy, so well prepared. They where made with granny smith apples, watercress salad & white balsamic vinaigrette. I was really impressed how well the granny smith apples made the dish flavorful. City Lobster and Steak in NYC near Radio City Music Hall has outstanding service, good drinks and a satisfying menu.
Risotto is one of my favorite dishes. Always comforting and satisfying. They make it so good here. The corn puree with the sea scallops are wonderful together. Made with roasted Florida corn puree and jumbo sea scallops. The name of this dish is Acquerello Risotto at MC Kitchen in Miami Design District.
